Jimbo’s Pizza is a popular site in Celina not only for its flavorful pizza, but also for the friendly small town atmosphere. Owner Dago Rodriguez has owned Jimbo’s since 1993, becoming the sole proprietor in 2005. Dago was born in Mexico and immigrated too Laredo as a child. After completing college in Mexico, Dago brought his family to Celina in 1990. He worked at a horse ranch and foundry before turning his talents to pizza. Dago and his wife have three children; Israel, James, and Amy.

Numerous athletic posters on the walls at Jimbo’s illustrate Dago’s support of Celina ISD. He is involved as a mentor at elementary school where he encouraged students to excel in school and rewarded their hard work with pizza for churches, fire and police offices, and offer discounts for school lunches and athletic events so student organizations can raise funds for their activities.

Dago is an example of what people expect from a small town business man; he is caring and generous to his community, school, and patrons. He also provides the best pizza in North Texas!
